Zinc is often missing in today’s highly modified malts, but it’s critical for enzyme function and yeast reproduction. A small addition at the end of the boil helps build durable cell walls and ensures budding cells form correctly. Oxygen, on the other hand, is essential during the lag phase. It allows yeast to synthesize sterols and unsaturated fatty acids—basically the building blocks for flexible, resilient membranes. And then there’s FAN, supplied by both the wort and supplements like DAP, which gives yeast the accessible nitrogen it needs to grow and avoid sluggish fermentations.
